
Sentio Beechworth Shiraz 2023 750ml
Handpicked fruit was separated into two parcels. One completely de-stemmed and partially crushed and fermented in stainless steel. The other parcel was fermented in an open top concrete vessel with lightly treaded100% whole clusters. The wines were pressed to a combination of barrique, demi, and puncheons (some new). The wine was blended in October, then bottled in February 2024.
"Exaggerated perfume. Jubey. Raspberry coulis. Ample spice too. Palate is then tight, minerally, peppery and washed with red berried fruit. Nice wine. Fruit is juicy, sweet, lively and delicious. Itās young, itās energetic, itās still building."
