Caldera Saison w/ Saperavi Can Sgl

Saperavi grape pomace lends a rich, tannic, red grape character to this unique saison, complemented by citrus notes from our house culture. The flavour is full, balanced and satisfying, thanks to a careful blend of tart, bitter, and sweet.

For this beer, we use saperavi pomace sourced from Bent Road Winery in the Granite Belt. Following an ancient Georgian tradition, their grapes ferment on skins for several months in earthenware qvevri, large clay vessels buried underground, before pressing.

Once pressed, we collect the resulting pomace and give it a second life by macerating it with our beer for six weeks. Finally, we package and condition on raw honey for several months.

The base beer is fermented and aged in french oak barriques for 16 months.
